A regular trip to the local Glasgow Fruit Market lets us source fresh ginger, grading and ensuring the highest quality at purchase. We rush this fresh ginger home, peel it, wash it roughly and leave it to soak, softening and releasing her flavours.

Taking the soaked ginger we begin drying, chopping, and dicing by hand. Then we cold press the root, to retain all the healthy antioxidants, flavours and oils that set our Raw Sodas apart from the crowd.
With the ginger juiced it is vacuumed and racked overnight in a technique learned from the champagne production process, we found this is the best way to separate the chalky sediment whilst retaining all the healthy vitamins and leaving the complex characteristics of the flavours undamaged.
Separately we simmer Pimento berries to draw out all the aromatics and some of the weight of these spices and berries. To this, we pressure infuse Cardamom into freezing cold Scottish Freshwater bringing out the cardamom's delicate flavours and bringing polish to the product.
The final note is added to the hand batched blending, a candied lemon zest, to brighten up the mix and deliver a refreshing mouthful of healthiness in a can.
Finally its filtered, carbonated, canned, pasteurised, boxed again all by hand, and all with our passion.
