Our X_Series is our chance to trial new concepts at a micro level, before taking to the wider UK market for commercial approval.

We ask that all of our exclusive 'Friends with Benefits' members get stuck in to the conversation at this experimental level: allowing us to adjust recipes, refine the production technique further, and help us make smarter decisions moving forward into 2022 and beyond.

X_Blueberry was a firm favourite in every Poll we did on Instagram earlier this Autumn, so we got to work finding the best berries we could get our mitts on.

We settled with two incredible crops from up in Loch Ness, and after five phases of intense development, we think it's ready to show off.

A longer colder maceration pulls all of that incredible flavour from the blueberry skin, so much so, you can smell that skin before you've even taken a sip.

Next up was a spice profile to support that bright, light floral skin. Having trialled heavier flavours such as pimento and cacao nibs, the verdict was that it detracted away from the clean nature of the berry. Next up was caraway seed, a personal favourite but again, it took the attention away from these incredible berries.

So, just like Goldilocks, we opted for a lighter, complimentary spice; coriander seed. You may notice from our inimitable Burnt Lemon, that coriander always likes to play a supporting role, and never enjoys the limelight. This seed brought enough weight to let thee berries shine, but also a brightness which adds more complexity on your 3rd and 4th sip.

This is now one of the team's all-time favourites.

Two batches made it to the final stage of trials this Winter, but if it goes down like a storm, we will add this Blue Boy into our Autumn line up for 2022.
