Who would have thought that commercial lemonades’ have never seen a fresh lemon in their life? We didn’t understand and still don’t. So, we made our own. Disclaimer - we’re not trying to put those ‘selling fresh lemonade’ by the sides of the road kids out of the job, but we think we’ve got the graft, craft and love to potentially inch our Burnt Lemon in to 1st place.

Introducing Burnt Lemon - our juiciest of tarts and the tartiest of juices. Think lemon meringue pie without the Mt Everest of refined sugar. There’s certainly no sweeteners in sight with this little number.

ESSENCE OF FRESH

Sourcing only the finest Class 1 lemons directly from the bustling stalls of the Glasgow Fruit Market, our journey then starts to create a beverage that transcends your average, ordinary lemonade. Through a meticulous process that pairs a little bit of tradition and a little bit of modern ingenuity, we craft a lemon elixir that sharpens the taste buds and nourishes your inner lemony soul. We recently adjusted the balance slightly and formulated a perfect combination of Turkish and Portuguese lemons. Yum is the right answer.

Hand-selecting only the freshest of lemons, we ensure unrivalled quality and bags of flavour. Each lemon is carefully washed, soaked, and dried by hand, preserving its natural essence and vibrancy. Here, we’re searching for balance. You may not know that there’s well over 30 commercial varieties of lemons available, it’s our job to strike that balance between round, juicy lemons and big knobbly ones to tease out their magical oils.

SWEET, SUGAR, NATURAL CANDY… MAN

Yes, we did just try to tie in a bit o’ Christina Aguleria to that header. No, we won’t do it again. Promise. To extract the vibrant oils and flavours locked within the lemon zest, we employ an ancient technique dating back to the 15th century known as oleo saccharum. By delicately candying the zest with raw organic cane sugar, we create a punchy aromatic mixture rich in terpenes, elevating the flavour profile to new candied heights. It’s this relentless pursuit of oil extraction that ensures that your mouth is coated on every sip.

ROASTY TOASTY

With precision and care, we crack out the blowtorch to caramelise the candied zest, eliminating any trace of the chalky, soapy taste commonly found in commercial lemonades. Once the char is present and persistent, it adds complexity and binds with the organic vanilla and cracked black pepper. This transformative process yields an intense and complex caramel, allowing the natural raw flavours to shine through without the need for naughty additives or excess calories.

Black pepper and lemon are best friends. That’s why we developed a new recipe in 2023 by using a high proportion of Tellicherry Pepper - a eency weency teeny weeny exotic peppercorn hailing from India and the Malabar coast. We refuse heat when infusing into freezing cold fresh Scottish water under pressure. This infusion process extracts the full flavour of the peppercorn, supporting the natural accents of our zest and contributing to the depth and complexity of our lemony goodness. Tellicherry is a superior peppercorn but not in a ‘i know something you don’t know’ kind of way. It’s purely down to the their high volatile oil content which results in a strong, robust flavour. We source the best to produce the best.

THE ART OF BLENDING

A balanced blend of tradition and innovation, freezing cold fresh Scottish water infused with black peppercorns is folded with freshly squeezed lemon juice and the meticulously roasted, candied zest. Patience is our greatest ally as we allow the caramel to bind with the raw ingredients, resulting in a blend that is as brilliantly refined as it is in packing a flavour punch.

From the careful blending process to final filtration, carbonation, and packaging, every step of our production is carried out by hand - no corners cut, no cheeky refined sugar snuck in, no compromise. We’re so far removed from yet another artificially sweet soda.
