If you like a bit of lime with your tacos, then look no further. The latest addition to our sharp as a tack can of limeade are none other than Mexican limes and we promise we’re really onto something here. Thank you, Mexico, you really do know your citrus.

Our Sharp As A Tack soda has got more juice in it than ever before. We increased our juice component by a whopping 1.5% last year. Crazy biscuits, we know. It’s fizzier than ever before. It’s multiple award-winning. It’s lip-smackingly tasty. If you’re a curious caterpillar or perhaps a cautious crayfish, don’t let us stop you and go get it - it’s waiting for you to take you to new lime centric heights and we KNOW you will not be disappointed.

ONLY THE FINEST

Our journey begins with the careful selection of Class 1 limes, sourced directly from the local Fruit Market. Each lime undergoes rigorous inspection to ensure only the best of the best fruit makes its way into our soda, here we’re looking for a glossy emerald hue and a thick skin, full of those bright oils we revere.

PRECISION

Once the limes are washed, soaked, and dried by hand, we go full steam ahead with the delicate process of flavour extraction. Through meticulous hand-zesting, we capture the vibrant oils that imbue our soda with its distinctive aroma and long lasting flavour. Additionally, a deeper cut of the lime harnesses the tannic taste from the pith (that spongy centre of amazingness), adding depth to the flavour profile and emulating “that bite”.

ELEVATED TRADITION

Similar to our Juicy Wee Tart, the lime zest is then delicately rested overnight on a bed of raw organic cane sugar, a process known as "candying" that dates back to the 15th century. This technique binds the oils to the sugars, creating a concentrated aromatic mixture rich in terpenes. To top it off and add the ‘cherry’ on top to the complexity of flavour, we incorporate Makrut lime leaf, flushing it with our proprietary blend to incorporate those layers within our soda - weight, texture, and depth.

CRAFTING THE BLEND

The culmination of our efforts comes with the exacting blend of freezing cold Scottish freshwater and freshly hand-squeezed lime juice. A double whammy of freshness, if you will, at the exact right balance. This harmonious mix is then allowed to rest, allowing the flavours to fully develop and express their unique characteristics. The result is a symphony of tastiness that captivates the palate and invigorates the senses, done the right way. It’s our very own version of putting the lime in the coconut and shaking it all up.

It was a case of refining, tweaking and enhancing a ‘what ain’t broke don’t fix it’ recently with a Mexican Lime addition. Because we’re always evolving, analysing and never, ever stagnant.
