OUR DEBUTANTE
Spring has officially sprung AGAIN and that means it’s rhubarb time, you flavoursome bunch. Forget the fact there’s cute baby animals running around the fields or that the birds are chirping again and the land is lush and full of life, because our lady of the manor is ready for her 2025 outing. Unusually late this year due to the weather being all over the shop - a bit bloody sunny and a bit bloody wet - don’t you love UK weather? But better late than never, we reckon.
We reimagined our iconic Rhubarb Soda for 2024 and she’s back with a boom, keeping her signature elegance and bite, but with a dialled up flavour and consistency.
We refined our sourcing, expanded our grower network beyond Scotland to include Yorkshire and Herefordshire, and introduced a blend of four premium varieties: Victoria, Sutton, Stockbridge Arrow and the luscious Raspberry Red. This allows us to maintain flavour quality and colour, and extend our season.
We moved away from a “single origin” approach to a more resilient, multi-source model - ensuring less variation and better flavour across batches, no matter the weather. Sustainable, reliable and more Rhubarb-y bubbly goodness for you for longer. You’re welcome.
Our process remains meticulous - overnight maceration, cold infusion, a touch of hand-crushed Sichuan pepper for balance, candied pink grapefruit zest for lift, and ice-cold Scottish water for that crisp, refreshing finish.
Expect only four limited batches this year, starting June 2025. Bright, earthy, and delicate - Rhubarb Soda is back and better than ever. Fill your glass with her trademark beautiful peachy hue and let us take you back to a visit to your Nan’s garden, albeit with a modern Rapscallion take.

CHOOSE YOUR FIGHTER
We get asked a lot about how we fizz fiends like to have it. What tickles our pickle? Floats our boat? Gets us feeling all fruity?
Our Rhubarb really loves:
- Grapefruit
- Tangerine wedges
- Green apple slices
- Rosemary spears
- Mint leaves.
Whilst she welcomes a flourish, our ultimate fave is to have her straight up. Bore off you might say, but our lady of the lot has a lighter fizz and delicate finish so deserves to bask in all her glory - fresh out of the fridge, poured over ice and garnished with a wedge of grapefruit for good measure. On a warm Summer’s day and ideally enjoyed with friends, nothing beats that first sip.
If you want to ramp it up a notch, a splash of gin or vodka goes perfectly if you’re in the mood to misbehave responsibly.
And, if you really want to get the party started, or you’re just a bit warm ‘n’ sweaty, it’s an absolutely banging ice pop - get some of those fiddly ice lolly moulds and boom, you’ve got your Summer ice lolly drawer sorted.

FOR THE CULINARY EXPERTS
We recently visited our friends and stockists, Three Chimneys on the Isle of Skye, as part of our 2024 FLVR Series and our minds were a wee bit blown when their Head Chef recommended a harmonious pairing of our Sour Face Pull alongside their knockout lamb dish. Bold and flavour heaven - our kind of party.
Not only that, and please don’t tell our own soda on us, but they paired our Ginga Ninja soda with their rhubarb dessert. Chef’s kisses all round.
We digress. Back to the Rhubarb appreciation society musings - for the meat lovers out there, rhubarb is just the bee's knees when paired with pork or duck too. For the sweet tooths, you’ve got yer Gran’s crumble of course but it’s been known to blend beautifully with:
- Custard (a stalwart of the British dessert table)
- Ginger (rhubarb and ginger jam yum)
- Elderflower (go all fancy pants on it and try your hand at making a cordial)
- Dates (we love a chutney here at Rapscallion honestly don’t get Gregor started on condiments)
