DESCRIPTION

Deep, rich flavour with a long savoury bite. This is our Hot Little Number. There is method to this madness. Strawberries tend to steal the show in any drink, so we brought them back to reality with a gentle slap from chilli.

A juicy Scottish hug in your glass.

During July we grab the plumpest strawberries from all around Scotland and race them back to Glasgow before there’s any chance of the flavours and goodness fading.

Straight away we hand wash and rinse each and every strawberry, then our tireless team begin the epic hulling of the strawberries. This is done just above freezing to ensure that it’s as unpleasant and horrific a process as it sounds?!

But equally and most importantly keeping the berries and the guys at this inhospitable temperature allows us to retain and coax the rich colour and wonderful taste from the skin and the flesh of the berry. It's what we do.

Separately hot Scotch Bonnet chillies are blended with Tellicherry pepper and macerated together to help counter and control that thick, natural sweetness of the berry.

Once the ingredients are bound together in ice-cold Scottish freshwater we filter, carbonate, and seal this delightful taste of summer into our wee cans.

Finally, we pasteurise and wrap them up with love ready to send to you.

Suits dry white spirits, gins and tequilas. We also love it with Aperol or Campari.

How We Do It:

Warning: attempting to recreate this at home may result in disappointment, purple countertops, and deep existential regret.

We’ve done the hard part - you just need to crack a can.

1. BRITISH STRAWBERRIES

British Strawberries are raced to Glasgow at peak season to capture their velvety goodness. We wash and hull our plump Strawberries before sitting on Raw Organic Cane Sugar overnight to coax out that colour and thick flavour.

2. BALANCING SWEET SPICE

Once we’ve captured this red velvety liquid, we fold in Scottish freshwater and cracked telicherry pepper to stretch the syrupy goodness and create harmony. Fresh Scotch Bonnet Chillies are shredded and sat on this sanguine base to create balance and bite.

3. THE ART OF THE BLEND

Once we’ve struck a balance between sweet, rich and spicy, it’s now time to tame the beast. We carefully filter our final blend, ensuring we don’t strip that velvety texture. Finally, by gently carbonating overnight, we can create tiny little bubbles that let the Strawberries sing in your glass.
